A favorite of the bakeries we work with our Hollis hard red wheat matches flavor with excellent baking quality. Great for whole wheat breads. We use it in 100% whole wheat pizza dough every Sunday. Heirloom grain and stone-milled to order in Mendocino County (it doesn't get any fresher than this.)
